Dal khichdi is a soulful comforting food we have in Indian cuisine. 


Dal khichdi is a wonderful blend of rice, lentils, a few vegetables, spices and condiments. This is usually a one pot meal when made at home.


But in this blog, you can get step by step guidance on how to make restaurant style dal khichdi at home. 


Yes, the home style khichdi is much different from the restaurant style khichdi and that's why the latter is more flavorful and rich in taste.


This recipe involves a few steps but if you get them all right, you will have a wonderful Dal khichdi ready with you to devour. This is a balanced meal with carbs, protein and good fats because we used only ghee.

To Cook Dal & Rice


Basmati Rice - 1 Cup


Ghee - 1 Tbsp


Bay Leaf


Chana Dal - 1/4 Cup


Masoor Dal - 1/4 Cup


Toor Dal - 3/4 Cup


Salt-1 1/2 Tsp


Turmeric Powder 1/2 Tsp


Water


To Make Onion Tornato Tadka


Ghee - 2 Tbsp


Cumin Seeds-1 Tsp


Green Chili-2 Nos


Garlic-1 Tbsp


Ginger-1 Tbsp.


Onion - 2 Nos


Tomato 2 Nos


Salt-1 Tsp


Turmeric Powder-1/2 Tsp


Kashmiri Chilli Powder - 2 Tsp


Coriander Powder-2 Tsp


Water-1/4 Cup


Garam Masala Powder 1 Tsp Kasuri Methi Leaves


For Assembling


Ghee 3 Tbsp


Onion Tomato Tadka


Cooked Dal & Rice


Coriander Leaves


Creen Chilli - 1 No.


Toppings For Dal Khichdi (Optional)


Ghee - 2 Tbsp


Red Chilli - 2 Nos


Cumin Seeds - 1/2 Tsp


Asafoetida / Hing


Coriander leaves


Kashmiri Chilli Powder

Method:


1. Wash and soak the dals separately in water for 1 hour.


2. Soak the Basmati rice in water separately for 30 mins. 


3. Take a pressure cooker, add ghee and bay leaf. Add


all the soak dals/lentils one by one and add salt, turmeric powder. 


4. Mix well, add water and pressure cook for 4-

5 whistles on a medium flame. Keep aside.


5. Take a pot full of water. Boil it and add the soaked rice. Add some salt. 

6. Cook the rice fully on high flame for 5 mins and then strain it. Keep the rice aside. 

7. Take ghee in a wide pan, add cumin seeds, green chillies and red chillies. 

8. After they are sauteed, add chopped ginger, garlic, onions and saute until they are golden brown in colour. 

9. Then add finely chopped tomatoes and cook for 2-3 mins.


10. Next add salt, turmeric powder, Kashmiri red chilli powder, coriander powder. Mix well and add water. Cook until the tomatoes are mushy/ for about 5 mins. 

11. Then add garam masala powder and kasuri methi. Mix well and turn off the stove. 

12. Take a deep pot, add the onion tomato tadka, cooked dal and mix well. Cook for 5 mins on medium


flame.


13. Add chopped coriander leaves, chopped green chillies and ghee. Mix well.


14. Check for seasoning and add salt if required. 

15. Transfer the rice into the dal mixture and mix well. Let it cook for 2-3 minutes on low flame. 

16. Turn off the stove and keep the khichdi aside. 

17. For the Tadka, take ghee in a pan. Add red chillies, cumin seeds, hing, fried onions, chopped coriander leaves and Kashmiri red chilli powder. 


18. Once done, transfer the tadka to the Khichdi and


serve the restaurant dal khichdi hot and nice
